Filhóses are deep-fried Portuguese sweets that are similar to donuts but are softer and usually not in a round shape.
Ingredients:
- 1 kg all-purpose flour
- 100 g butter or margarine
- 2 tbsp olive oil
- 2 tbsp brandy
- 2 tbsp sugar
- juice from 1 orange
- 6 eggs
- 25 g baker’s yeasts
- oil for frying
- cinnamon and powdered sugar for decoration
- pinch of salt
Directions:
Phase 1:
- mix yeasts with salt and dissolve it in a lukewarm water
- take a big bowl and put flour in it
- take a pot and melt butter or margarine on a medium flame
- add melted butter to the bowl with flour
- mix well all ingredients in the bowl
- add yeasts and eggs
- knead the dough
- preheat the orange juice mixed with brandy
- add the juice with brandy to the dough and knead it again for a couple of minutes
- when done, sprinkle the dough with flour and cover the bowl with a cling foil
- leave in a warm place for about 3 - 4 hours
Phase 2:
- take a big pot and pour oil into it
- heat it well
- oil (in the olive oil) a little bit your fingers and start forming Filhóses by taking small pieces of the dough
- form oval cakes with thicker edges and with a thinner middle part
- start frying when the oil is hot and fry till the colour of Filhóses is golden
- after frying put Filhóses on a paper napkin for loosing extra oil
