Omelet on rice with fried pork and garlic served with chilis in a fish sauce

A nice composition of different flavors with a lot of intensive garlic aroma. Fried pork, or chicken if you prefer, served with a plain, sticky rice topped with an egg and some hot chilis in a fish sauce.

Why to choose an omelet on rice with fried pork and garlic served with chilis in a fish sauce

Why? Because it is a wonderfully flavorful dish that can be seasoned by your own according to your senses or to your stomach. I will recommend you starting without extra chilis, as the garlic taste is really strong, and the meal is spicy from the beginning. Then, if needed, add cautiously the extra chili sauce. If you like spicy dishes with omelet try also an Omelet on rice with fried crispy basil leaves and minced pork meat.

Chilis in the fish sauce

Chilis in the fish sauce - what to know about them?

Remember, you can always add more of them to your meal, but you cannot remove it from your plate! Apart from that, the sauce in which chili is sunken is salty, so might additionally worsen the dish if you are not eating a lot of salty meals. Another thing is, that if you are not accustomed to the fish sauce's taste, you might not like it just from the beginning. You will need time to start liking this taste or better to say, be neutral to it.

Remember also that the plain rice and the egg on it, both have a very slight aroma and not only might be easily dominated by chilis and the fish sauce, but they can also easily absorb all flavors.

Ok, now let’s go with each component step by step. So, let’s start with an omelet on rice.

Omelet on rice

Although it sounds strangely, it is quite good and looks very nicely. As the egg neither is mixed with pork, nor with the rice as it is in the fried rice, you can easily do with it whatever you want. You can eat separately, mix it with rice, put it aside and season separately the rice and the egg, or just go with the way like it is served – take some egg and some rice at the same time.

However, I would not call it an omelet. For me it is rather a scrambled egg on rice, but doesn’t matter how you call it, it is interesting and tastes good.

… and now it is time for

fried pork and garlic

Now, it is time for crème de la crème – fried pork with garlic. Well, what to say more – it is perfect. Thin pork slices wit no fatty parts, with no bones, and with weird pork elements. Just a tender pork meat fried in a huge amount of garlic.

I do not know how many garlic cloves they used for that dish, but the intensiveness of its aroma was really enormous. Although no chilis were added to the fried meat, it was spicy and definitively did not have a bland taste. If only you like pork and garlic, I strongly recommend that dish to you.

Apart from the soft meat and the nicely dominating garlic flavor, it was ideally fried. Neither was it too little nor too much fried. The meat was not deprived from all its juices and the garlic was not bitery burnt.

… finally comes the sauce

well, what to say more than what was said above? Maybe just to remind you once again the thing that that is the most important: be careful as the sauce is hot!

Summary

All in all, if you like pork, the meal is a good choice for you. If you do not add too much chilis, the dish will both have some original Thai flavors and these flavors that are well known for you. Nothing unknown, no spices that you might not be accustomed to, and no strange parts of the meat.

Omelet on rice with fried pork and garlic served with chilis in a fish sauce is an ideal option for all meat eaters that like garlic and are not afraid of experimenting with extra flavors – these from chilis in a fish sauce. It is also a good meal for all those who like to have a meal that basis on ingredients that are well known in Western countries but at the same time like to try something local.

Omelet on rice with fried pork and garlic served with chilis in a fish sauce – who should avoid it?

Definitively it is not for people who do not like rich flavors. It is also not good for those who cannot eat garlic in a huge amount. Even if you try to remove garlic parts from the meal, you will neither be able to get rid off them completely nor will be able to eliminate the strength of the flavor from the dish.

It is also not for those that do not eat meat. Even though the meat is not mixed with rice, I would not be 100% sure that the egg was not fried on the same oil.
